Easy to do "Choco-later" Carob Pudding Recipe
- 1 ripe hass avocado
- 2 T carob powder (you can find this in health food stores like Goodness Me, Bulk Barn, S&H Health Foods etc.)
- 2 T maple syrup (or any other liquid sweetener like honey)
- 1t vanilla extract
-1/2 c plant-based milk (soy, almond,cashew, etc. Although I personally like it best with soy/coconut milk)
Optional Ingredient: carob chips (can be found at Bulk Barn/Goodness Me)
- Place all ingredients in a blender, in the order listed above (with the exception of the fruit and carob chips, which are for garnish).
- If you don't have a blender you can use a food processor although it will take a little bit more patience to have the right consistency of a pudding.
- Blend all ingredients until you have a pudding consistency.
- You may want to twik the recipe's sweetener/carob powder to suit your personal taste preferance (this is usually the case when you buy a avocado which is not the "hass" type and hence will have a different size and taste than the one recommended in this recipe)
Rationale for use of carob vs cocoa powder:
In this recipe we use carob instead of chocolate/cocoa powder, because carob powder doesn't have any caffeine as does cocoa powder and it has lesser calories than chocolate. Caffeine interferes with the re-absorption of calcium in your kidneys (Osswald & Schernermann, 2011), relaxes the muscle that should be tightened to prevent your stomach contents from coming up back again (hence promoting heart burn/gastroesophageal reflux) (Losiriwat, Puengna & Leelakusolvong, 2006),and it does much more non-health promoting effects on your body, which I will not go into since this is a food blog and not an academic paper. We like to keep it simple but while also striving to continue making sure that you are eating healthily, wisely and of-course tastily!
